on that point, the author goes a step further to claim that the French do this best. Not only that, Trubek (2000) seems to bring out the idea that French
cuisine, cooking methods and approaches have seeped into American ways of cooking. The author does of course focus on the history of haute cooking and what it means. She also
notes that France was the center of everything related to food, and that it has been true for some time. She writes: "The culinary knowledge ultimately defined professional cooking practices
in the Western world" (Trubek, 2000, p.29). French haute cuisine would be the rage (Trubek, 2000). The author makes a good point. In her favor, the French seem to be
the center of everything from social change to high culture. Throughout the centuries, struggling artists flocked to Paris and of course that is still a center of fashion. Cannes, where
an annual film festival is held, is located in France. France to a great extent is a place that sees cultural and artistic change, and seems to attract creative people.
Additionally, Europe is attached to all the culture to come from the Middle Ages, something that America, for example, lacks. Haute cuisine evolved from the idea of royalty and excess
and there was no place that was attached to that concept like Versailles. France has a rich history. It is the home of champagne and all things edible and in
excess. That said, the French do not serve the huge portions today that are commonplace as American fare. In some way, European culture is a bit more sophisticated than are
