As scientific research begins to discover the toxic effects of many common additives in processed foods, and individuals gain greater access to this research and additional information about the health effects of what goes into their bodies, there has been something of a backlash against the processed food trend. Moreover, as ecological consciousness grows moving into the 21st century, there is also an environmental impetus to acquire food locally, rather than rely on national and international shipments of foods from geographically diverse regions (the accepted model under industrialism). These trends have converged in recent years and manifested as a national preference for what is termed "organic" food, which is perceived to be healthier. However, the use of organic additives in such foods continues, and consumers should be aware of the realities of these additives and their potential toxicity. This paper will assess the toxicity of fifteen common organic food additives. This paragraph helps the student explore the concept of "organic" as it relates to food. To begin with, one must understand precisely what is meant by organic. In the most basic sense, as the phrase pertains to chemistry, "organic" simply refers to a compounds molecular structure being built upon a foundation of carbon and hydrogen. Such a molecular setup is necessary in order for the body to be able to properly metabolize a substance and convert it into energy.
