THE HISTORY OF THE STATE CUISINES Most of us are familiar with southwestern fare but not all of us know why it varies so from state to state. This all has to do with the history, industry, agriculture, economic conditions and just about every outside influence one can think of as to how and why certain foods came to be known as belonging to certain states. All of us know about the hot peppers of Mexican and New Mexican food. The chilis, cayenne peppers, chipotl peppers and more are all used to spice and season these tasty but fiery concoctions. Some of the basic ingredients to be found in every New Mexican dish are the corn or flour tortilla, hot sauce, pinto beans, to name just a few. In the days of the Native Americans their primary agricultural crop was corn. Because the Pueblo Indians were not, for the most part, hunters, they relied on crops for their food. Therefore their staples were always corn and beans. The Corn was used in many ways, usually ground into a flour and made into tortillas and filled with beans, rice, and for the seasoning those fiery hot peppers. Because meat was not a staple in their diet their main source of protein was through the bean dishes they consumed. Theirs was an economically poor background, if one could call it that.
