Saffron has been used by mankind for centuries. It represents, in fact, one of the worlds most valuable substances. Consequently, its production has expanded greatly
from its original geographic origin. Its use has expanded even more greatly, however. While that use has taken a diversity of forms, the intent of this paper is
to discuss the history of saffron as a culinary spice. The name saffron can be traced back to the Latin word
safranum and this Latin word, some contend at least, can be traced to the Persian language and then to the language of the Arabic peoples (Willard, 2002). The word
is believed to be descriptive of the plants yellow colored foliage or perhaps its use to attain a yellow dye (Willard, 2002). The Persian origin of the word is
made even more fascinating by traces of the plant that have been found in prehistoric paint pigments in an Iraqi cave that date back to 50,000 years ago (Humphries, 1996)!
Today saffron is derived from the stigmas of the plant Crocus sativus (Photograph 1). The stigmas are gathered in large quantities
