The American dining public has had a long-standing and passionate love affair with the food of Italy but it has all too often limited what it interprets to be Italian food and assumes is always tomato based and includes lots of cheese. As a result, the various regional specialties are only now becoming relatively commonplace. In fact, specialties of the north are becoming almost as popular as Americanized Italian food such as lasagna with meat sauce, chicken parmigiana, and fettuccine Alfredo. And to dismiss Italian cooking by saying that the north means white sauce and the south means red sauce is to minimize (and miss out on) an entirely unique and varied arena of culinary pleasures.
