such unpleasant but relatively mild side-effects as nausea, vomiting and diarrhea, over 5,000 people per year die from eating tainted food. Even worse is the fact that its not possible
to tell by looking at it, or even by smelling it, when food is unfit for consumption. While some spoiled food is obvious, bacteria such as E. coli and salmonella
dont announce themselves until the person becomes ill. Because we must ingest food to survive, the problem is global in scope. In addition, much of the food we eat
in the United States, or additives and components of some of our food, is produced abroad where safety standards are lower than they are in the U.S. Perhaps the most
recent example of this is the bad pet food that killed dogs and cats across the country; the tainted ingredients came from China. Thus, making sure that food we eat
is safe is not merely a personal matter, it is one of public policy as well. Background Information This paper concentrates on food borne illnesses from a public health perspective,
and as such, material has been surprisingly difficult to find. Repeated searches using parameters such as "food borne illness + public health" have brought back few usable returns, since the
material needs to be from scholarly publications that have been published within the last five years. It has been necessary to search repeatedly, changing the search terms each time, to
