red meat, a common food item in the restaurant industry. Escherichia coli is sometimes present even in the intestinal tract of healthy cattle. When these cattle are
slaughtered and the meat is processed the bacteria has the potential of contaminating the otherwise healthy meat. This is particularly true when meat is ground since the bacteria
can be intermixed all through the meat. While cases of person to person transmission of Escherichia coli 0157.H7 have yet to be documented in a restaurant environment, that
means of transmission should not be ruled out as they have been documented in child care centers when food handlers were infected. Other ways through which contamination can occur
is through cross contamination of drinking water with human sewage. The threat Escherichia coli holds over the restaurant industry is a very real one. In addition to it link
with red meat some strains of Escherichia coli can be found in roast beef, unpasteurized milk and, like the more common strains of the bacteria, in municipal water sources.
Cases have also been linked to public swimming facilities and wildlife reservoirs. While one might jump the conclusion that this latter occurrence has little to do with
restaurants, it must be remembered that restaurant employees frequent such areas just as do many members of the American public. If they contract Escherichia coli from their recreational activities
the probability increases that they could potentially pass it on in their work activities. So too does the probability increase that other critical figures which impact the restaurant industry
