The plan presented in this paper is for the opening of a new 50 - 75 seat Peruvian restaurant in the San Rafael area of California. The restaurant, which will
be called simply the Peruvian Place, will be the first Peruvian restaurant in the city, and provide a high-quality differentiated service in a speciality upscale full table service environment. The
differentiation will not only be provided in terms of the food and drink menu which will offer range of authentic Peruvian dishes, but also the environment and the staff. The
environment will be decorated utilizing images, artwork and culture of the Incas from the South American region. This approach should provide for a sufficiently authentic experience to attract customers and
retaining business for future visits. The staff will be highly trained, which will include familiarization with the food and drink menu to facilitate the ability to give advice to customers
regarding the food and drink. These elements combine to provide for a pleasant customer experience. The timing of opening his restaurant is seen to be fortuitous as 2011 is demonstrating
positive growth trends that will benefit the opening of a new restaurant. The restaurant industry in the United States is growing, 2011 is the first year expected to demonstrate real
growth after three years of negative growth. It is estimated that there will be a real growth rate of 1.1% nationally, taking national restaurant industry revenues to $604 billion in
