The purpose of the observation is to assess operations specific to the drive-through. The paper concludes that Dunkin’ Donuts’ shift to central factory production may enable it to provide greater selection to customers, improving productivity in larger markets by avoiding lost sales. In smaller locations, it needs to be attuned to the fact that customers expect any standard menu item to be available during business hours and make some effort to see that it is. Allied Domecqs is the parent company of Dunkin Donuts, Baskin Robbins and Togos Restaurants. The Dunkin Donuts location observed for this assignment is one situated on an outparcel of a suburban shopping center for which a standard Wal-Mart is the anchor tenant. Wal-Mart is open 24 hours, as is the grocery store also located in the same shopping center. The building housing Dunkin Donuts also houses Baskin Robbins. The inside serving area is split into two distinct sections, each devoted to one of the chains. The drive-through window, located on the Dunkin Donuts side of the building, serves only Dunkin Donuts products. The restaurant provides no ice cream products through the drive-through. Recent operational changes at Dunkin Donuts are creating a shift of focus within the company. Formerly, each Dunkin Donuts location was responsible for baking and selling its own product, separate and distinct from all other Dunkin Donuts locations. The operational change underway at Dunkin Donuts is that there will be central bakeries in larger cities that will deliver "fresh doughnuts three times a day to 50 stores" (Urry, 2004; p. 29). This is a rather recent shift that has not yet been fully implemented, and it has no place in smaller markets where there are not enough stores to support a central factory. Such is the case at the Dunkin Donuts location observed for this exercise. The observed restaurant still bakes on the premises all of the product it sells.
