even the simple tortilla changes due to modernization. Modernization in general has created a situation that is profitable, but has cost the people nutritionally (Pilcher, 2002). This is true in
many instances. Modernization and globalization has created a situation where people are eating Italian, Chinese, Indian and Japanese food perhaps, but authenticity is hardly there. Pilcher (2002) makes a good
argument as he looks at what modern machinery has done to the food in Mexico. There is a great deal of evidence presented by the author but the article to
some extent becomes confused and muddled. The author makes comparisons regarding modernization, globalization and other phenomena, but he uses many different examples outside of even Mexican fare. Yet, the topic
is important and the author also addresses economic consequences due to the status quo. Krishnendu Ray (2006) writes about different kinds of Indian restaurants in New York City, suggesting
that some are exotic and some are just comforting. The author writes about tourists, and Indians, who each look for both authenticity and comforts (Ray, 2006). Modernization and blending of
cultures is a theme that is found within the context of Rays (2006) article. The author provides a sense of what the Indian confronts as his native food has
changed, but a positive notion is that Indians are accepting of modern ways. The fact that it is not so bad comes through. The author provides a compelling argument because
it is also an unexpected stance. Yet, Fishbane (2008) actually writes about Krishnendu Ray who is a professor of food. One can say that it is likely that Ray does
have a different view than the average individual. Still, Rays (2006) explanation as to how flavors have withstood the test of time, but succumbed to modernization, is quite compelling. That
