And yet, the media regularly carries stories of this or that example of spoiled food resulting in human illness, revenue and reputation loss for the vendor, as well as a sense that there is no such thing as "safe" food practices. In reality, the most fundamental considerations of microbiological considerations offer the opportunity to better understand certain aspects of how and why foods "go bad" and what can be done about it in terms of both prevention and protection. Regardless of what human beings do in terms of food cultivation, production, and transport -- it is meaningless if precautions are not taken that assure the greatest degree of microbiological integrity and protection are maintained. Fundamental Microbiology Microbiology is simply the study of the microscopic organisms such as bacteria, protozoans, viruses, and certain algae and fungi. The most basic premises of microbiology and how the "creatures" it studies operate offer the greatest measure of understanding in terms of why and how food spoils. That understanding then leads to a greater awareness of how micro-organisms change in ways that lead to a piece of meat, fruit, or any other human "foodstuff" might develop toxic attributes related to specific environmental conditions. Lewis (2002) outlines the most basic ways in which foods spoil and why food becomes discolored, soft, odoriferous. She writes: "For the most part, this deterioration is caused by enzymes-either contained within the food or produced by microorganisms, such as bacteria, yeasts and molds growing in the food" (pp. 26).
