the central nervous system. If the host is pregnant, the bacteria can infect the fetus (Finley, 2001). While listeriosis generally presents with only flu-like symptoms, this infection can be
potentially quite serious. Listeria monocytogenes is a "Gram-positive, facultatively intracellular" bacterium (Jin, 2002). This bacterium can cause severe infection in both animals and humans. Rates of infection for this
disease are highest among infants, the elderly, pregnant women and individuals whose immunity is suppressed (Jin, 2002). Worldwide, human listeriosis is rare, with an annual incidence of 0.2 to 7.4
per million and it occurs primarily in industrialized countries (Calder, 1997). The reason for this is quite evident when one considers the principal source for this food-borne bacterium, which
is the centralized processing of the food industry. Contaminated food is considered to be the most common source of listeriosis outbreaks. Large-scale listeriosis outbreaks generally come from ingesting processed
food (Wing and Gregory, 2002). Foods commonly associated with listeriosis include soft cheese, unpasteurized cheese and milk, undercooked chicken, fish or meats (Calder, 1997). Listeria monocytogenes has a
"special life style," which enables this bacterium to escape from phagosome and circulating antibodies (Jin, 2002). One of the primary clinical features of listeriosis is infection of the central nervous
system (Jin, 2002). Listeria monocytogenes has a special tropism toward the brain, especially, the brain stem (Jin, 2002). Scientists have learned a great deal concerning listeriosis by studying the disease
