Colonel Glenn Highway Dayton, OH 45435-0001 To the Editor: We are taught from childhood, and we study in our classes
at this very university the life-long importance of good nutrition. It is the basis of good health. Many of us have taken the lessons to heart and have
learned them well. It can be difficult to achieve the daily 3 - 5 vegetable servings and 2 - 4 servings of fruit recommended by the current food pyramid.
Reaching those levels is virtually impossible for those students relying on on-campus food service. Examination of this weeks Union Market menu illustrates
the problem. Union Market offers potatoes every day of the week, but green vegetables (green beans and broccoli) appear only two days of the week. Union Market offers
carrots one day, but all other non-potato vegetable choices (corn, peas and rice) are starch foods that arguably should not be included in a meal that also includes potatoes.
Pizza, hot dogs, fried vegetables and other high-fat, high-sodium foods are available in addition to the dinner choices. Diners at Union Market can
avoid these taboos of nutrition by choosing the soup offered each day, but that choice does not address the lack of fresh vegetables and fresh fruit.
Of course we have The Hangar, where choices this week consist of five other kinds of soup and a variety of fast food. While it is
gratifying to have Pizza Hut, Taco Bell and Chick-Fil-A food available, these vendors also do not offer low-fat, fresh foods that need to be available to students. All of
