the lack of health care in the Mississippi Delta, and what can be done about it. Discussion First, we need to acknowledge that there is a problem. Many times it
seems that the people who are in a position to help are also those who are insulated, by their wealth and status, from the very realities they should be working
to mitigate. There are many problems in the Delta, which is a chronically underserved area of the country. One of the most pressing is what one study calls "household
food insecurity" (Stuff et al, 2004). The term "household food insecurity" is defined as "limited or uncertain availability of nutritionally adequate and safe foods or limited or uncertain ability to
acquire acceptable foods in socially acceptable ways" (Stuff et al, 2004, p. 2330). A 2002 survey revealed that "11.1% of U.S. households were food insecure," with "food insecurity rates of
[greater than] 35% for households with family income below the federal poverty level" (Stuff et al, 2004, p. 2330). This surely shouldnt be a surprise; poor people have more trouble
buying food than those who are better off. But there is are many additional complications that come with inadequate food, including "decreased dietary intake in adults ... psychosocial dysfunction in
children ... increased body weight in women ... hypoglycemia in diabetics ... compromised health status in the elderly ... and sociofamilial problems" (Stuff et al, 2004, p. 2331). Since the
