block of ice is very solid, meaning the molecules are barely moving within it (though they are moving). When that ice becomes water, however, the molecules move around more; and
when that water becomes steam, the molecules move around even more quickly. Heat comes into the situation because whenever heat is applied to
a substance, it starts the kinetic chain going. Going back to our ice cube-water-steam example above, heat applied to ice causes the molecules to move and the ice to melt.
Keep on applying heat and the molecules move faster and become steam. In short, there is little difference between the chemical compounds of ice and steam (both consist of two
molecules of hydrogen and one of oxygen). But heat determines the kinetic energy of those forms of H2O, and therefore determines the physical composition of the molecule.
