the history and uses of garlic. Garlic Garlic comes from the genus Allium which is a genus that also includes such things as leeks and onions (Genus of
the Week, 2004). This genus is recognized by the fact that it grows in bulb formation (Genus of the Week, 2004). It is also, interestingly enough, part of the lily
family, Liliaceae (Genus of the Week, 2004). Garlic is considered an herb and they possess muted green leaves that are flat (Garlic Fest, 2004). The leaves can grow to
2 feet tall and there is a round top that possesses white blooms that shoots up from the center of the plant (Garlic Fest, 2004). It is an herb
that is known for its strong odor and its acrid flavor (Garlic Fest, 2004). A head of garlic is referred to as a bulb and each individual bulb can contain
between 8 to 12 cloves (Garlic Fest, 2004). The clove is often called a "toe" and "Each clove is enveloped by a thin paper covering which should be removed prior
to consuming" (Garlic Fest, 2004). "Garlic, whose pharmacopeial name is Allii sativi bulbus (11), has a long history of medicinal use by cultures around the world for a wide variety
of conditions" (The Herb Society of America, 2004). Garlic is commonly seen as one of the first medicines recorded by man. It was included in an ancient text called the
