but with that is curiosity about customs and foods from different regions. This is no surprise. Food today is entertainment on some level. People go to Japanese restaurants to try
out the chop sticks, or they try a German restaurant for the first time to experience new tastes. They often believe that they are eating authentic cuisine, but all too
often this is not the case. In some way, the fact that when cuisine travels, it loses something, is rather disappointing. In a way, the blend of cultures due to
globalization has rendered a watered down version of foreign cuisine. Along with an interest in other cultures, and the idea that fusion is desirable, is the idea that human beings
have neglected their health. There is a new interest in health that includes attention to diet and exercise. Food choices become important and as people dine out more and more
often, they realize that they must be able to secure nutritious items from restaurants in order to remain slim and healthy. This is also a global concern and trends have
been witnessed in this area. In examining a number of writings on food, several themes emerge along these lines. Patterns and trends that have come to the forefront in contemporary
culture include attention to ethnic foods as well as healthy and light fare. The fact that New York City and other locales are concerned about the kinds of ingredients that
