hard to know how much salmonella gets into meat products and while that is the case, precautions can be taken to make sure that meat products are safe. While
such precautions must be taken at the plant, on that level, practices in ones own kitchen are also helpful. Further, prevention is far more effective than detection, which is an
important principle of food control in respect to the assurance of food safety in todays food manufacturing industry. The reason is that once a problem is detected, it is
simply too late. What are ways that food can be safe for the public? Again, one problem is salmonella, but there are others. There is the fear of food irradiation
and what that can do to human beings and then there is the proper labeling of meats and dairy to ensure that nothing is consumed past the date that is
safe for consumption. A few years ago an expose was done in respect to one food store chain that actually repackaged meats when expiration dates were old.
They would often marinate the old meat and even sell it with a different label; they did anything to save the meat from being thrown out. In short, all of
these tactics are unacceptable. Consumers must speak up and make sure that practices like that are not being done anywhere, and also, inspectors must make sure that everything is running
