and steakhouses are the norm. In studying cuisine from other countries, authenticity may be found in a small hole in Greenwich Village, but more likely a blend of foods from
at least two parts of the world will share a plate in many new restaurants. Dim Sum, an appetizer often served in Chinese restaurants in America is often referred to
as "Chinese hamburger." As foods from other parts of the globe reach the States, there is an attempt to Americanize or cook perhaps blander to please our boring palates. Money
cannot be made if the authentic cooking cannot be sold. Many recipes are altered. Additionally, there is a trend to blend cuisines, offering a smorgasbord of international choices. This papers
focus will be on Vietnamese and Turkish cuisine. A walk through Manhattan will provide a basis for analysis as I taste the foods and absorb the atmosphere. The background
of each of these cuisines will be explored in addition to cultural changes that have influenced their evolutions. Popular Vietnamese and Turkish foods will be discussed as well as the
ways in which they are prepared. The paper will quickly turn to a look at why these types of ethnic restaurants have grown in popularity and how they came to
America in the first place, particularly focusing on changes made in order to profit in the United States. Culinary global fusion will be addressed inclusive of which other cuisines specifically
blend with Vietnamese and Turkish fare. Restaurant references and menus will be provided. Much of the research, particularly concerning restaurants will focus on the New York City metropolitan area.
