of the most concerning diseases are caused by the Listeria monocytogenes and Escherichia coli. Listeria monocytogenes is a gram negative bacteria that presents numerous problems in the processing of
food (Bille, Rocourt, and Swaminathan, 1999). The bacterium can be passed from human to human, animal to human, or through a variety of food products (Cahill, 1995). Ready to
Eat (RTE) meats, however, seem to present the most concern for contamination. Listeriosis contamination can occur in every type of ready to eat meat from packaged lunch meat to
prepackaged sandwiches. Seafood seems to be of particular concern in regard to Listeria monocytogenes contamination. Farber (2000) notes outbreaks of listeriosis as a result of contaminated fish products.
A diversity of ready to eat meat products have been implicated in Listeria contamination, however. Escherichia coli, in turn, is a member of the Enterobacteriaceae family. This
family is comprised mostly of aerobic, Gram-negative bacilli, many of which cause gastroenteritis in humans. Escherichia coli is comprised of numerous strains, each of which results in different
symptoms in the infected human. Noninvasive diarrhea results when a person contracts enterotoxic Escherichia coli. These strains are associated with diarrheal symptoms and comprise a relatively small
portion of the numerous other organisms which cause diarrhea. One strain of Escherichia coli which is particularly concerning is Escherichia coli
