Americans diets have changed tremendously since the earliest years of our history. While at one time out diets consisted of food that either we produced in our
own gardens and barns or that was produced in the near vicinity of our homes. Today, however, we rely on a commercial food industry, a commercial food industry that
goes hand in hand with concern over just what it is that we are eating. The idea, of course, is to eat natural foods that are healthy for you.
This idea is hard to put into action, however, in our modern day world. Our conception of the ideal
diet is shaped by a number of factors. As Pollan observes, many of these factors are political and shaped by the very food industry that we need to safeguard
ourselves against. Pollan emphasizes the strength of the meat industry that rebelled against the original federally issued dietary advice to eat less meat. Just as important in shaping
our dietary direction, however, is the health food industry that prepackages those things that are "healthy", the vitamins and the nutrients that we need into one pretty pill (Pollan).
