Diet is considered to be one of the most influential factors in determining our health. This is particularly true when considering individuals that are suffering with
cardiovascular complications (Keuhneman, Saulsbury, Splett, and Chapman, 2002). Gleason, Bourdet, Koehn, Holay, and Schaefer (2002, p. 1445) report that dietary noncompliance results in "ineffective dietary responsiveness" as well as
increased risks for patients with coronary heart disease. While everyones health can be influenced by diet, older individuals are even more susceptible because of their increased propensity for cardiovascular
complications. Heart disease has a number of implications to society. Not only is the disease life threatening, it takes a
tremendous financial and psychosocial impact on both those who suffer from it, their families, and society in general. Early detection is critical in applying our best regime for the
treatment of heart disease. So too is education to both acquaint individuals with symptoms so that they might seek help at the onset of a heart attack and to
acquaint them with the causes of heart disease and the appropriate interventional methods so that they might implement needed lifestyle changes. One of the more important lifestyle changes involves
the diet. Coronary artery disease as the leading cause of death in the U.S. The disease is responsible as well for serious
discomfort in patients with angina, can limit workplace and personal productivity as well as the quality of life. The economic costs of cardiovascular disease can be massive. Congestive
