as "diabetes," there are two distinct types of this metabolic disease, Type 1 and Type 2. While the existence of diabetes mellitus has been recognized since antiquity, it was in
the nineteenth century that a British physician recognized that there are "at least two distinct forms of the disease requiring diametrically opposing treatments" (Gale, 2001, p. 217). Type 1 diabetics
are generally young, thin and with normal blood pressure. Type 1 diabetes can manifest itself in children and is thought to have a genetic component. In the era prior to
the discovery of insulin, the distinction between the two types was stark. Children with type 1 diabetes, and some adults, died within a few months, but overweight older patients frequently
survived for years (Dagogo-Jack, 2002).Type 2 diabetics are generally older, obese and with high blood pressure (Gale, 2001, p. 217). The incidence of Type 2 diabetes has increased dramatically over
the last several decades. Type 2 is the form of the disease that is generally referred to when educational interventions address the need for diet and exercise. Risk factors
: There is a direct correlation between obesity/overweight and developing type 2 diabetes. Experts feel that poor eating habits, higher body weight, and a lack of physical exercise are the
causes behind the increased incidence of this disease (Mathur and Shiel, 2003). Experts feel that, in general, the risk for type 2 diabetes doubles for every 20 percent that an
individual is above the desired body weight for their height and for each decade after 40 years of age (Mathur and Shiel, 2003). Also, there is evidence that genetic factors
