meet the challenges that the function creates at the present time. Current Situation Labor Costs Weisberg (2001) reports that the ratio between total
beds and non-patient meals served daily at Tallahassee Memorial Hospital is 3.25. Because the number of non-patient meals served daily is not given, the same ratio will be used
to estimate Arbor Hospitals food service gross non-patient revenues. Arbor Hospital has 195 beds: 195 x 3.25 = 634. Average daily patient census is only 116, only
59 percent of capacity. In the face of lack of data, it will be assumed here that non-patient meals follow the same percentage as occupancy rate. Calculations are
based on 59 percent of 634 meals, or 374 non-patient meals served daily at Arbor Hospital. Average ticket total is $5, for average daily revenue of $1870. This
is based on 365-day operation, for an annual total of $682,550. Average food cost for the cafeterias operation should not exceed 35 percent
of revenues, and it is likely lower. Allowing 35 percent food cost, however, the cost of operations including labor should not exceed $682,550 x 35% = $238,892.
As can be seen in Table 1 below, the total cost of labor alone in 2002 was $451,338. This includes the labor associated with
