how they can best be managed. When multicultural considerations come into play, these considerations become even more diverse. Consider, for example, the case of Mrs. M, a fifty
year old widowed African American woman who suffers from obesity, insulin dependent diabetes, and hypertension. An additional consideration in Mrs. Ms case is her relative isolation. Not only
has Mrs. M. not driven since the death of her husband some nine months ago, her family is only able to visit on Sundays. This leaves Mrs. M largely
on her own in terms of caring for her basic needs. Many of the factors impacting Mrs. Ms lifestyle are negative
in themselves. The most paramount of these factors is diet and Mrs. Ms sedentary lifestyle. Like many African Americans, Mrs. Ms diet is far from optimal. She
enjoys fat laden foods, sweets, breads, and most of the things that are not in her best interest to consume. Her dietary preference in fact is the so-called soul
food. While the term soul food is a relatively recent addition to the American vernacular, the diet is one that has
characterized the South and its inhabitants for generations. With a few extraordinary exceptions like chitlins (pork intestines), soul food consists of many of the types of things that whites
and blacks tend to like. Things like fried chicken, barbeque ribs, and pork chops, in fact are staples for many across our country. It is likely, that this
cuisine obtained is interesting name in response to another factor in many black Americans lives. This factor is their close association with their churches and the pot luck dinner
