One must harken back, however, to the days before Castro's revolution to truly understand and appreciate the extent to which food reflected the very foundation of Cuban existence. Since the revolution, Cuban cuisine has changed to reflect a decidedly less creative approach, inasmuch as the government has effectively squelched any and all possible inventiveness by taking control of the restaurant market.
