but cautions that low levels are associated with strokes! Balance, it seems, is the key when addressing cholesterol in the human diet. Exactly how to achieve that balance,
however, is a highly controversial topic. The way we view cholesterol has changed many times within the last century. Today, cholesterol is
one of the primary targets of dietary changes that are typically prescribed for high-risk patients. Never-the-less, there is considerable controversy not only over the precise role of cholesterol in
human physiology but also over how to balance our cholesterol so that our health is optimized. While elevated cholesterol levels do raise some
concern several studies have de-emphasized the importance of cholesterol and saturated fats in cardiovascular health. Cholesterol, of course, is typically associated with fats in our diets. Cholesterol, after
all, is a lipid (Center for Disease Control, 2007). It is found in animal tissues. Cholesterol enters the human body as a component of food. It is
then trapped by special receptors that then pull the cholesterol molecules into cells where it is then metabolized. It is important to recognize
when considering our diets that not all fats and not all cholesterol is necessarily bad. Holford (79) points out, in fact, that fats from seeds and nuts (or oils
derived from seeds and nuts) as well as fats from cold water fish like salmon and sardines are actually good fats. They are a positive addition to your diet
