liquor (Wakely, 2000). The term liquor is usually used to refer to spirits; these are drinks that have been distilled, referred to as spirits. These types of alcoholic drinks make
up roughly 56.7% of all global alcohol consumption (Wakely, 2000). Unlike the beer market, which is focused in the west, the liquor market is truly global with many different
regional specializations based on the locally available ingredients and traditions (Toussaint-Samat, 2008). The largest single market producing liquor is China, with
Chinese domestic spirits making up 29.8% of the market when measured by volume of consumption. Vodka accounts for 11.1% of the market, gin, 5.4%, brandy 4.5% rum 3.4%, liqueurs 3.8%
and whisky as a whole 8.9% (Wakely, 2000). The latter spirit can be divided into areas of origin, with Scotch whisky having 3.2% of the world liquor market, American whiskey
1.3% and the rest coming from a number of areas (Wakely, 2000). Many of the spirits sold can be seen as highly differentiated, and while in some
of the different categories of liquor there may be a high level of competition such as the core categories of whisky rim and vodka, the cross-category acceptance of substitution by
consumers is low, as may be expected with a diversified industry (Mintzberg get al, 2008). With low levels of substitution and a
high level of international trade this is a market that is likely to change as global pressures come to bear. One of the key pressures is that of climate change
