Rick the salad hasher normally was dependable, but his counterpart David provided enough irresponsibility for three people. Davids resignation was a relief, but only momentarily. His departure left only one experienced hasher to perform the prep work that needed to be done before opening each day. It had been difficult to locate a suitable replacement for David, and of course the day came that Rick missed work. Head chef Joe pulled a line worker to take Ricks place for a day, but before the line worker could prepare salad ingredients in the manner prescribed by management, he needed to be trained in the use of all of the information required at various stations. Ultimately, quality suffered as the untrained worker attempted to fill in at the problem position and as others tried to cover for his absence at his regular station. Quality improved when Joe took over Ricks duties for a while, but customers were left waiting for their meals as Joe washed lettuce. The Multiskilled Work Force Clearly, one of the benefits of maintaining a multiskilled work force in food service is that no one operation is dependant on the regular worker being present. "Life" happens, even with the most dependable workers. Food service is an industry in which turnover is notoriously high, and the manner in which individuals leave jobs frequently involves no two-week notice or training of replacements. All too often, managers are left to assume that a worker has quit after not having reported to work for several days.
