about the "natural" and "artificial" flavorings of foods -- all foods. Ultimately, Schlosser points out that "the flavoring industry is highly secretive," (121) and it also takes up a small
chunk of property off the New Jersey Turnpike. In his book, Schlosser spent some time at International Flavor and Fragrances (IFF), which is billed as "The worlds largest flavor company"
(121). Schlosser points out, in verbal, graphic detail, his " taste test" in the IFF meeting room, noting that it was unusual test, in that there wasnt any food to
taste. Instead, he smelled, and in one "food" after another, "I smelled fresh cherries, black olives, saut?ed onions, and shrimp" along with freshly grilled hamburgers (129). The point that Schlosser
was making in his book is that the so-called "natural" flavorings we taste in our foods -- as well as the artificial ones -- arent really "natural" at all, but
rather, are manufactured and tested by a group of companies in New Jersey, among other places. While it could be said that
Schlossers revelations might be startling (especially as it pertains to the so-called "natural" flavorings), in truth, this isnt a family secret -- the food and restaurant industry has known for
years that a good chunk of flavorings arent developed in company kitchens, but rather, come from vials at the hands of scientists, that are known as "flavorists."
